1. In a large mixing bowl combine together the ground chicken breast, bread crumbs, egg, garlic, cilantro, hot sauce, salt and pepper. Then cover and allow to rest in the refrigerator as this will make it much easier to then form the Koftas (sausage shape patties), which you form around a metal skewer.
